I don’t eat meat very often. I am primarily vegetarian but I will admit I have a vice when it comes to meat. I love bacon. Bacon… the candy of meats. With summer quickly approaching I have been thinking about barbequing and how I incorporate bacon and the grill. I thought I would share one of my favorite non-vegetarian grilled meals.
Bacon Wrapped Teriyaki Tuna Skewers
Ingredients
2 lbs. fresh tuna steak, cut into 1-inch cubes1
1 lb. lean bacon, NOT thick-sliced
1 large can pineapple chunks (you won’t use all of them)
1 teaspoon fresh garlic, minced
1 tablespoon fresh ginger, minced (optional)
1 bottle of Teriyaki sauce
Package of skewers
Prep
Place tuna in a large bowl or container. In another bowl mix Teriyaki sauce, garlic and ginger. Submerge tuna cubes in marinade, cover, and refrigerate for at least 30 minutes. Preheat your grill to high. Prior to grilling, wrap each one inch tuna square in bacon then slide onto the skewer, alternate bacon wrapped tuna and pineapple.
Cooking
Stay close by and turn the sticks by hand to keep from burning. Skewers are done in just 4 – 6 minutes.
Serving
Although you may eat the tuna and pineapple off the skewer, I always find it nice to serve these skewers on a bed of mixed salad greens or on a bed of rice.

1 You can also substitute tuna with chicken, steak, salmon or shrimp but I love it with tuna. (Do it with tuna!)
